Easy Recipes for Working Moms - Crock-pot Roast Beef on Bolillo Bread

One of the biggest struggles working moms have is finding meals to make with easy recipes to feed their family after a long day of working.  You want to know about easy make ahead meals that taste great.  Well, I've got your back and am about to share a meal with you that literally will take you five minutes to prep!  You guys know I am a true believer of freezer meals, casseroles, and crock-pot cooking because they all allow me to save time in the kitchen but still feed my family healthy and delicious meals. Now if you didn't know, I am a closet Julia Child's wanna be...I like to experiment when it comes to new recipes and challenging my limited flavor pallet every so often.  I also encourage those of you who don't know how to cook, or don't cook often to challenge yourselves with a new easy recipes every once in a while.  Well, I made roast beef in the crock-pot. Although this recipe isn't new to me, I am eating it in a new way, encouraged by a trip I took to California for a quinceanera.  One of the houses I visited had purchased some precooked roast beef and we had it on a tortilla...OMGGGGGG. So, after I returned home, I immediately decided to try and recreate this delicious meal and it was just as good with my crock-pot roast beef.  Since that was such a success, I decided I'd experiment putting it in one of my favorite types of bread, Bolillo! Check out what I did below... If you aren't counting, I just gave you three possible meals out of one!!!!  Once you make this will you please return and tell me how it was and how you tweaked it to make it your own! The Crock-Pot Roast Beef Recipe

This recipe is very simple that you can start in the morning before you begin working!  I also have been known to cook this on the weekend during a freezer meal cooking session.  I don't have images of the meat cooking, but trust it is so easy! Crock-Pot Roast Beef Pot Roast (your meat...can be whatever cut you prefer) 2 cans of cream of mushroom soup 1 can of water (just fill one of the emptied Cream of Mushroom cans) 1 packet of Lipton onion soup mix Mix all the ingredients together in a bowl and pour it over the meat. Some choose to brown off the meat first, but I've stopped doing that now and just add salt and pepper to the meat prior to putting it in the crock-pot. Cook it on high for 4 hrs or low for 8 hrs or until it is the tenderness you like. I like for the meat to be firm, but easy to shred.

Building Your Sandwich

Now to make the sandwich, just added the meat to a Bolillo roll. Bolillo is a type of Mexican savory bread similar to a baguette. Now my sweetheart, Luis, added avocado, peppers, tomatoes, mayonnaise, and cheese to his (he may have added something else, I honestly can't remember)...me I just had mayonnaise and american cheese with the meat. When I tell you this sandwich was DELICIOUS!!!! I promise you I am not exaggerating. Try it for yourself and you will be so happy you did. You can find the bolillo (bo-lee-yo) bread in most Panderia's (Mexican Bakeries).  I have even found small versions in the Wal-mart bakery. This is what it looks like. I hope you try out this easy recipe that I know will help out some of you busy moms!  I mean who doesn't want to fill their belly and their happiness bucket at the same time!?!?!
